The Green Monster

Today around 10am I found my energy levels CRASHING.  I had already drank my coffee for the day, so I decided I would forego more caffeine and instead “pep up” with a healthy dose of good food.

I decided that my mid-morning “pick-me-up” snack would be a smoothie using ingredients I found in my refrigerator.  As I opened my fridge, I realized I had some slim pickings in front of me.  Oh well, I wouldn’t let that stop me.  I decided to make a green smoothie/juice using all veggies I could find.  Here is what I came up with – I call it “The Green Monster.”

The Green Monster Smoothie/Juice:

Ingredients:

  • 1 green apple, peeled
  • 1 carrot, unpeeled
  • 1 large cucumber, peeled
  • 1 stalk of celery
  • 1 large handful of kale
  • 2 handfuls of ice
  • Juice from 1/2 lemon
  • Juice from 1/2 lime
  • 2-3 cups of water

Instructions:

  1. Place all ingredients into a high-powered blender such as a Vitamix.
  2. Blend on high speed until thoroughly blended.
  3. Drink to your heart’s content.

I have to admit, the looks of this beverage is not the most appealing, but the taste was not bad! It has taken me a little time to get used to drinking green smoothies/juices because their flavors are quite different from a sweet, thick fruit-based smoothie.  I am happy I’ve been able to get past this hurdle because this snack was just what I needed to get over the mid-morning energy hump today.
