Nothing beats roasted potatoes tossed with fresh rosemary, sea salt and black pepper. It is a classic dish that I will NEVER get tired of eating. My potato-loving Irish genes may be speaking here, but I have a feeling that even you non-Irish folks will love them too. You can’t really go wrong with rosemary and potatoes. Rosemary roasted potatoes will forever be in my regular rotation of meals.

Everyone should have rosemary roasted potatoes in their cooking repertoire, because it is a versatile side dish that goes with many different entrees. Roasted potatoes are like the neighborhood kids who get along with everyone! They can be highlighted at a fancy holiday dinner such as Thanksgiving or can be paired with a casual weekday meal of chicken, salmon or steak.

This recipe makes delicious potatoes that are golden, crispy and puffed on the outside, yet fluffy, tender and delicate in the middle.

These rosemary roasted potatoes are SO addictively tasty that I end up eating many of them before they make it to the dinner plate! The only thing that stops me from polishing them off while standing at the kitchen counter is that they are so piping hot straight out of the oven that they burn the roof of my greedy mouth!

I often make more potatoes than I am going to eat that night. By roasting more than I can eat, I ensure that I will have leftover potatoes that can be added to a breakfast hash or eaten with my lunch the next day. Smart, right?! Do this and you will get a two-fer out of the recipe.

These potatoes take a good 45 minutes to cook – but trust me, the wait is SO worth it… and while they roast, they will fill your house with the most pleasant aroma of rosemary deliciousness. Yum!

If you are looking to jack up the flavor-explosion of this dish, mix 3-4 cloves of minced garlic with the potatoes, olive oil, rosemary, sea salt and pepper before roasting. Occasionally, I will substitute coconut oil for the olive oil.

Description

This recipe makes delicious potatoes that are golden, crispy and puffed on the outside, yet fluffy, tender and delicate in the middle.


Ingredients

  • 2 pounds Red Bliss, Yukon Gold, or other thin-skinned potatoes, scrubbed clean
  • 2-3 tablespoons extra-virgin olive oil or coconut oil
  • 2 tablespoons dried rosemary or 3 tablespoons minced fresh rosemary
  • 2 teaspoons sea salt
  • 1/2-1 teaspoon fresh, ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and halve the potatoes and chop them into bite-sized pieces, leaving the skins on.
  3. Transfer the potatoes to a large bowl and toss them with the olive oil, rosemary, salt and pepper. The potatoes should be evenly coated with oil.
  4. Spread the potatoes out in one layer on a baking sheet. Bake for 40-45 minutes until the potatoes are golden and crispy on the outside and tender inside, gently tossing every 15 minutes.
  5. Remove potatoes from oven and season with salt and pepper to taste.
  6. Serve while still hot and crispy.

Notes

For added flavor, add 4 cloves of garlic, peeled and minced, to the potatoes, olive oil, rosemary, salt and pepper before roasting.
